Recipe: Cod Provencal 6th of April 2017

This oven baked cod dish gives you a taste of Provence. It takes about 40 minutes to make. 

Ingredients (4 servings): 

800 g skinless cod fillets
8 potatoes
2 carrots 
1 onion 
2 cloves of garlic
4 tomatoes
2 dl chicken stock 
1 dl chopped parsley
2 tsp finely chopped thyme
Black olives
50 g butter 
200 g fresh or frozen snap peas and/or asparagus beans
2 tbsp olive oil
1 lemon
salt and pepper 

Directions:

  • Preheat the oven to 200°C. Slice potatoes, carrots and onion, and bake them in an ovenproof dish  for 20 minutes. 
  • Mix butter, parsley, thyme and lemon zest from 1/2 a lemon. Taste with salt and pepper. 
  • Chop or press the garlic, cut the lemon into wedges and the tomatoes in half. Add this together with the cod fillets and chicken stock into the ovenproof dish and bake for another 10 minutes. 
  • Finish by adding the snap peas/asparagus beans, olives and the butter mix to the dish and bake for another 3 minutes.
